At Prudencia, you will encounter food from all over the world that is united by a focus on the techniques and cultures of the countryside: local ingredients, minimization of waste, a connection with the natural environment, and preservation techniques that take time, such as smoking and fermentation.
Following a temporary closure due to the Covid-19 emergency, Prudencia re-opened in October 2020 with a fresh approach, “Garden and Hestia Afternoons” We are open from Thursday through Sunday, behind closed doors, from midday to 5pm, with a maximum of 20 diners. Each group is assigned a table but can also spend time in our garden, or visit the various live fire stations, fueled by re-forested wood. The new menu format includes 8 courses, served progressively at a leisurely pace. The concept is to invite our clients to a gastronomic experience that will last between three and five hours. The gastronomy afternoons are by reservation only.
Our peripatetic menu is never set; instead, we offer a small number of daily specials that never repeat. We are always exploring and learning and we hope that customers will be eager to join us in our culinary adventures. Our social media pages regularly update with daily menus.

Owners and husband and wife Mario and Meghan met and fell in love a few blocks from Prudencia. They lived in the U.S. for a few years in order to further studies in culinary and visual arts and returned to Bogota in 2013 with a baby on the way and the dream of opening a restaurant together in their old neighborhood. They are thrilled to open the doors and hope that you will feel at home in Prudencia.
Our house was once a family home and community pre-school and has now been restored, retaining its most significant historical characteristics such as unusual Republican-era plasterwork. Neighbor and celebrated architect Simon Velez designed all of the new architectural aspects including an iron and glass roof supported by recycled petroleum pipes. The result is a refreshed building that is filled with light while maintaining the imprint of its past. Meghan and Mario drew from traditional styles re-envisioned with a contemporary sensibility and employed local artisans to produce all of the furniture and decorative elements. In the back garden we produce herbs and flowers, smoke meats and vegetables and have a children's playhouse.
Prudencia is located in La Candelaria, the historical heart of Bogota and its most interesting neighborhood. Simultaneously a small pueblo and cosmopolitan sector full of artistic and intellectual life, La Candelaria is the inspiration for the spirit of Prudencia. We built the restaurant for and with our neighbors as a local gathering spot and a place where newcomers can experience some of the open friendliness, diversity of cultures and surprising beauty that drew us here.
